Chelsea Machajewski brings 8 years of industry experience and a passion for hospitality to her role as Sales and Events Manager at Devon Seafood + Steak in Oakbrook Terrace and J. Gilbert’s Wood-fired Steaks & Seafood in Omaha. Having worked across several markets, Chelsea plays a vital role in delivering the consistent, 5-star service our guests know and love. 

Her extensive knowledge and attention to detail allow her to craft a personalized and seamless experience for every occasion. Chelsea’s go-to menu recommendation ... the Char Crusted Ahi Tuna at J. Gilbert’s, which is perfectly crusted and seared wild caught Tuna served on a bed of roasted potatoes and asparagus and slathered in rich and creamy foyot sauce.

Roland Day

General Manager

Roland discovered his passion for cooking at an early age, learning in the kitchen alongside his grandmother. His connection to the restaurant industry deepened when his parents purchased a restaurant while he was just 11 years old, and he has been immersed in hospitality ever since.

After attending culinary school, Roland built a diverse career as both a Chef and General Manager across multiple restaurant concepts, joining our Company seven years ago where he leads the team at J. Gilbert’s Wood-fired Steaks & Seafood.  Roland is deeply committed to creating memorable dining experiences and believes that great food has the power to bring people together and create lasting memories.

Outside of the restaurant, Roland enjoys spending quality time with his family.
